Long Run

Sunday I went on the last long run before the Malibu Half Marathon this Sunday!

Since then I have been compulsively checking the weather in Malibu for this Sunday:

Nearly perfect! I would prefer the high be 70, but I’ll take 74. The race starts at 8:30 and it will likely be considerably cooler, I would guess about 60. Should be great weather.

My last 10 miler was last Sunday morning. It went well. I pushed myself and ran the back half faster than the first half (it was also up hill). My hips were really tight afterwords and I am having some heel pain. I’m 100% sure it is plantar fascitis. I had a brief running stint early in college where I developed it and I can feel it coming back in my left foot. I got heel cushions and I feel pretty confident that it will not impact me on Sunday. I have an idea of a pace I want to maintain but the point of this race isn’t running a pace, its finishing 13.1 miles. Times goals are for another time.

We are out of Nike Ads so we’re moving on to other ads.

The plan for this week is a lot of stretching, wearing comfortable shoes (wore heeled boots today, whoops), and get pumped for Sunday.  I went on a 4 mile run today which was pretty awesome. My noise wasn’t running as much as it has been and I felt really, really strong.

I am very excited for Sunday. Some may know about my not so secret desire to run a marathon. Obviously these distances require advanced planning and I have to consider my schedule and as a student, and what is possible in the foreseeable future. Obviously, a year from this Summer I will be taking the bar and who knows what will happen in my life after that. For now, lets just say I am looking forward to challenging myself in the future.

Super Freak

I saw this at the Farmers Market this weekend and knew I had to buy it. Who wouldn’t want Siamese eggplant? I love the “freak” veggies. I always make sure to give them a good home in my belly.

Tonight I used the eggplant to use it for flat bread pizza with butternut squash, onion, garlic, salt, and pepper on Trader Joe’s Whole Wheat crust.

I only ate half, and saved half for tomorrow.

Carolyn tipped me to a great desert, pumpkin ice cream from Trader Joes. I added mix ins of course! Tonight I chose cinnamon and chocolate chips.

I used the ice cream scoop of my childhood. Many of my kitchen utensils are from my parents house!

Hello dessert. I love you. This literally tasted like fall. Pumpkin-ey, nutmeg-ey, and cinnamon-ey. SO good. Do yourself a favor and go out and buy some tomorrow!

I also had another new kitchen acquisition… a magnet!

Its like a daily Operation Beautiful reminder :). The note it’s holding up has been on the fridge of every apartment I’ve lived in since May of 2008. I originally posted it to get me through the LSAT and have moved it with me since. This is the 4th fridge its been on! To me, it means not to make plans because life always turns out better than your plan could ever be. I know its been true in my life.

On that positive note, hope everyone has an awesome week! I have Thursday classes on Wednesday (woo hoo! No Wednesday busy day!) Thursday I have no class and my Mom lands in LA Thursday to watch my Half Marathon this Sunday. It’s going to be an epic week!

Roasted Pear and Cranberry Crostata

Yesterday my friend had a Fall theme potluck. I got in the spirit by making Roasted Pear and Cranberry Crostata from the Flour Cookbook. No recipe, buy the book!

So delicious. I have no words. Really, you can never go wrong with the Flour Cookbook. Not only was the dessert stunning to look at but the pear was so soft and lightly sweetened. Melt in your mouth delicious.

Overall, the party was excellent! Let’s just say when your friends with foodies you will never be disappointed at a potluck. There were squash tacos, sweet potato biscuits, pesto pasta, pasta bake, stuffed pepper, salmon dip, roasted broccoli, cauliflower soup, baked brie with jam in puff pastry (so good) and plenty of booze…

Clearly, we hated the food…

And then I rolled home.

Things are about to get serious…

So a few days ago I confidently announced that there are no dishes that scare me. I think its true. I see complicated dishes as a challenge and I’ve always loved a challenge. I mean, hell, I’m in law school. I’m not sure why ‘almond flour’ translates into hardcore in my mind, but it does. Today I spent $9 on almond flour (you win again Whole Foods!) and tomorrow I am attempting a fabu dessert from the Flour Cookbook. The recipe has homemade frangipane and pate brisee. The names are French which makes them sound intense. I am a little but nervous but mostly excited.

Orange-you Glad its Thursday?

Cheesy title, I know but I couldn’t resist. I am so glad it’s finally Thursday. Wednesday is my busy day so having it past me is a relief.

Tonight instead of going out and doing something fun I stayed in to outline (taking all my notes and breaking them down into a short, valuable document which can make or break an exam). After working for a couple hours I decided it was time to eat. But what should I eat?

Even Izzy was perplexed. Yes. I went there. Don’t blame me. Blame it on the hearsay exceptions.

Then I saw a giant orange and some beef and before you know it I was roasting veggies, making orange scented couscous and grilling beef and orange. I know. I have a sickness.

This was the final product.

Roasted parsnips, potato and broccoli, yes I had couscous and potatoes. It’s almost finals. I’m entitled.

Orange Scented Couscous which basically involves cooking couscous with orange zest and is fantastic!

Orange and Balsamic Grilled Beef. The flavor combo was inspired by this months Everyday Food. I took orange zest, balsamic vinegar, and juiced half of a giant orange and grilled the beef in the sauce. This was obviously an improv kinda thing with no recipe so I wasn’t sure if it would orange or balsamic enough but it turned out pretty good. The flavor came through and it was nicely complimented by the couscous. And yes, I grilled the orange slices.

Pretty delicious for having no clue what I was going to make for dinner. Yum!

1. Favorite flavor of ice cream?

Ginger ice cream from Scoops in Edgartown on Martha’s Vineyard. Hands down best ever!

I’m from the Midwest so that would be pop.

3. If you could travel anywhere for a month, where would you go?

I would go to Fiji with a great camera, running shoes, books, my lap top (for blogging purposes) and a ton of food. I would only require a two room house. One room for sleeping and one room for cooking. That would be the best vacation ever.

4. Favorite thing about blogging?

I love that blogging motivates me to try new things and push my culinary boundaries. I also love meeting other wonderful bloggers! The healthy living and food blogging community are full of wonderful, supportive people. Def the best part of blogging.

5. Do you prefer tricks or treats? Just kidding

TREATS! We all know how I feel about treats!

Yes. Twice. The first time I was probably like 8. I was in Kentucky attending a family reunion and it was the day before my birthday. I was stunk while riding horses or watching horses or something to that effect. It was so upsetting I believed I said it was the “worst birthday ever” while sobbing in a kitchen. The second time was in Boston in the courtyard of Harvard Medical School. There was much less crying.

Breakfast Obsession

I have a new breakfast love. Yes, I might be more in love with this than I was with baklava oatmeal. Well, almost.

I saw Kaitlin eating Van’s Waffles a few days ago. Then while strolling through Whole Foods pretending like I could afford things I saw Vans on sale! Well, you know, sale for Whole Foods. Kaitlin made them look so good I knew I had to try them.

Toasted in the toaster for one min and drizzled with honey, this breakfast could not be easier. The waffles are some of the best frozen I have had. 5 grams of protein and 5 grams of fiber make this breakfast super filling. I love reading the label because I actually know what the ingredients are. We are what we eat, right? I only wish that there were more than 6 in a box. With two per serving, these were gone by Wednesday.

And yes. The backdrop for this photo shoot was my cats scratching mat, in case you were wondering. Don’t judge… there was good light. Ah, the life of a food blogger.

Quickies: Squash Pasta Bake

Per my last post, the past few days have been Stree-vember. But never fear, I have not yet surrendered to frozen meal. Lets be real: I’ll never eat a frozen meal unless it is a Barefoot dish I mass produced myself. I just can’t do TV dinner. Finals are depressing enough without depressing food. However, I have been playing around with how to make quick versions of my favorite dishes. I have a couple in mind I hope you’ll enjoy!

Remember last week when I made Squash Pasta Bake? Well it was really good and last Monday I really wanted some. Issue: I had so much work to do. I could only spare about 30 mins to cook and eat. Solution: I made a quicker dinner with all the same ingredients.

First, I roasted squash, eggplant, onion, and garlic at 425 with salt, pepper, and EVO for 20 mins.

While the veggies are roasting boil one serving of brown pasta and drain. Benefit of this approach? Lots of time off to do reading!

Once the veggies are done roasting combine them in the pasta pot with pasta, a small amount of EVO and cheddar cheese (clearly the best part of the dish). Then I topped with prosciutto. Yes, impending finals brings back my love of prosciutto.

Yum. This is pretty similar to the original dish but was executed in a fraction of the time. Cheese and prosciutto is the ultimate comfort food, right?

Stress-vember

Hey there blog world. Sorry there are no pictures yet from Halloweekend. I used Catie’s camera (because I need to find a receipt from last January in order to get mine fixed) and I’m having a problem transferring the picture off the camera. But I will deliver at some point. I promise!

Today is the 1st of November so happy November. Yesterday after the race I had an anticipatory panic attack about the entire month of November. The last day of November is the last day of class so that means that it is time to gear up for finals. In law school this includes outlining, practice test taking while keeping up with the usual work load. I know it will all get done but thinking about the volume of what has to be accomplished and the fact that my entire grade hinges on my ability to do it well is very stressful.

I’m lucky to have a lot of exciting social events in the next few weeks but at the same time, they take away from my ability to complete work. That being said, my social life is taking the backseat for the next two months, the blog might as well. Don’t worry, I’ll still be here all the time but I might not be posting everyday like I usually do. Or maybe I will. The blog is a great source of stress relief for me so who know.

I did want to take time to complete a questionnaire that Kaitlin tagged me in on her blog so here it is!

What was your motivation to start blogging?

My motivation to start blogging was Law School! After one semester I needed a creative outlet for my thoughts and a place where I could be and interact with other people around a topic that wasn’t school. Two weeks into first semester Left Coast Contessa was born.

If you had to sum up your blog with five words, what would they be?

Girl enjoys butter, cocktails, running.

Do you have any embarrassing blog-related moments? If so, spill!

Not that I can think of. I have embarrassing cooking moments like starting a small kitchen fire or forgetting to put flour in cookies. Sometimes I make random typos that aren’t edited out, like putting questions marks where they don’t belong.

What is a dish you’ve been too intimidated to try?

After pasta, nothing scares me.

But there are some challenging thing I want to try like layer cake, bread, and sushi.

What is your favorite dish to cook for others?

Anything from the Flour cookbook because everything from the Flour cookbook is good.

What was the first healthy living, food or fitness blog you discovered?

Carrots n Cake! Followed closely by Healthy Tipping Point and Eat, Live, Run

Do you crave sweet or salty? Or both? Or neither? But if you say neither, I’ll assume you’re lying…

Both! I have chocolate every night and I love love love salt! I love food and I basically crave everything.

What is your favorite restaurant not in or very close to a town in which you live or have lived?

Tough one! I love Le Pamphlet in Paris, France; everywhere in the entire country of Turkey. In the US I love the ice cream at Scoops in Edgartown, MA (on the vineyard). I also love the seafood on Marco Island in Florida.

LA Cancer Challenge 10k Race Recap

Today I woke up very early and ran in the LA Cancer Challenge 10k benefiting the Hirshberg Foundation. I left the house at 6:30, picked up Ela and we walked over to the VA grounds for the race. It was so early we could see the sun rise. I was also coughing a lot because of being sick. Ick. I’ve never been in the VA Grounds despite seeing them almost every day so I was excited to finally see another part of my neighborhood.

I really liked the vibe of this race. First of all, because it was on the VA Grounds there weren’t any random people walking around. It was only race related people. There were also a lot of groups of family and friends wearing matching shirts and holding signs referencing people who had had pancreatic cancer.

We did the stretching thing, the bag drop thing and the bathroom thing before lining up for the race. The 10k didn’t have as many runners as the 5k which was nice. I like a smaller race.

One thing that bothers me, maybe I’m alone in this, is when people don’t line up by their actual expected mile time. There were FAR too many people at the 6:00 min mile and 7:00 min mile signs. I know its exciting to be near the front but it makes the first few miles a total mess.

The gun went off, it took a couple seconds to walk to the start line and we were off. As I mentioned yesterday, my main goal was to not kill myself in this race. I wanted to run a race I was proud of but I have a half marathon in two weeks so we didn’t need to win any awards here.

Mile 1-3: The course was a loop so the first loop was mile 1-3. I felt really good. The course was very hilly which was good because the half marathon will be very hilly. The first two miles were CRAZY packed. There were a lot of people who were running more slowly than where they lined up. I had chill music going for the first 2.5 miles. At one point I passed a women who was probably 70 running wearing a shirt that said “I’m running for my son”. I might have cried a little bit. Honestly, the first three miles were pretty similar which is why I’m lumping this review. There were some really sweet high school kids handing out water along the course and there were tons of aid stations. The last half mile before mile three was a hill. Mental note: mile 6 sign is on a hill. Ugh.

Mile 3: Mile three hit right after passing the finish line. I saw that I ran the 5k in 28 mins which is only one mins slower than my 5k time during my last 10k. As mentioned mile 3 was all hills. “So Fly Like A G6” came on my ipod and I pushed through. As you might know, I was sick all week and was coughing on the walk over. On the course I was spitting phlegm the entire time and my nose was running but no tissues so I just kept going.

Mile 4: Mile 4 was all down hill. It felt a lot like mile 3. At this point I was thinking “only two miles, you got this!” I was feeling really good at this point. I might have thrown up in my mouth a little bit which sounds a lot worse than it felt. I was passed by some barefoot runners. I wondered how all the gravel on the course was treating their feet. I passed a photographer and posed for him. I hope it turned out well 🙂

Mile 5: Mile 5 was great. Again, I felt well rested and I knew I would be able to sprint to the finish. The course went along the 405 which wasn’t very scenic. I started passing people that I have been running alongside the whole time. More phlegm. The last oh, .2 of the 5th mile was on a hill but at least at that point you could kinda see the mile 6 sign. 

Mile 6: Mile 6 was quick. Half of it was on a hill but then the course turns and you can see the finish line. I was able to sprint the last .1 mile. I finished the race in just over 56 mins.My first thought after finishing was that I really had to blow my nose.

Do I wish I ran it a little faster? Yeah. But you know what, I’m under the weather, didn’t run all week and I have a Half Marathon in two weeks. As Ela reminded me: “its about the Half, not the 10k”.

After the race we hit the post party! There were some awesome stands. We hit the Don Francesco’s coffee stand, a farming CSA stand, the Vitamin Water stand, the fruit stand and the bagel station!

There was also a rescue dog stand complete with costumes!

So cute! We also saw another dog dressed up on our way out!

Overall, this was probably my favorite race despite this being my slowest race. It really meant a lot to me that I was able to run this race. Seeing the signs, being surrounded by a community and thinking about my friend and her Mom was really moving. It really meant a lot to me that I was able to run this race.
